Free Healthy Recipe - Autumn Nut Salad

Dairy free, Gluten free, Low GI, Low sugar, Wheat Free

This salad is scrumptious. There's no need to be put off by the long list of ingredients either. It's super simple, and it's filling. Invite some friends around and serve it as a tasting plate - or take it along to a picnic and serve is with a roast chicken - delish !

Ingredients
1 head cauliflower, cut into florets
½ tsp sea salt
DRESSING
1 handful parsley, chopped finely
SWEET POTATO HUMMUS
400 g sweet potato, roasted
3 cloves garlic, crushed
400 g chickpea, drained
1 lemon juiced
1 tsp sea salt
1 tsp cumin, ground
2 tsp tahini
SPICE NUT MIX
100 grams mixed nuts
¼ tsp cinnamon, ground
½ tsp sea salt
1 tsp cumin, ground
1 tsp coriander, ground
Method

Prep Cauliflower
Pre-heat oven to 2000C (1800C fan forced). Mix all ingredients for
cauliflower in a large bowl. Spread in a roasting pan lined with baking
paper. Roast for approximately 40 minutes until starting to crisp and
brown. Remove from oven, place in a bowl and cool.

Prep Dressing
Put all ingredients in a mason jar. Shake until combined. Refrigerate until
ready to use.
Prep Hummus
Place all ingredients in the bowl of a small food processor and process until
smooth. Refrigerate until ready to serve.
Prep Nut Crumble
Pre-heat oven to 1700C (1500C fan forced). Mix all ingredients for nuts
in a small bowl. Spread on roasting pan lined with baking paper. Roast for
8 minutes until toasted and starting to turn a shade darker. Remove from
oven. Cool. Crush coarsely.

Assemble
Place prepared cauliflower and dressing in a bowl. Toss gently to combine.
Smear/brush/scoop hummus onto a plate. Top with cauliflower mix.
Garnish with nut crumble and micro herbs.

Makes 6 servings
