Free Healthy Recipe - Grilled Figs with Ricotta and Maple Syrup

Gluten free, Low fat, Low sugar, Wheat Free

Ingredients
1/3 cup maple syrup
1 lime rind, finely grated
¼ tsp cinnamon, ground
300 gram wedge low-fat ricotta, cut into four slices
8 ripe figs, halved
Method

Preheat grill on medium high heat. Line a grill tray with foil.
Add maple syrup, lime rind and cinnamon together in a small jug and whisk until well combined.

Place figs, cut side up, on the grill tray. Drizzle maple syruo mixture over the top and grill figs for 4-5 minutes or until light golden in colour.
Place a slice of ricotta onto each plate, top with figs, drizzle with cooking syrup and serve.

Makes 4 servings (serve = 1 pancake)
