Free Healthy Recipe - Garlic, White Bean and Parsley Puree

Dairy free, Gluten free, Low fat, Low GI, Wheat Free

As long as you don' plan to be kissing anyone after lunch, this recipe is a winner. Garlic is a powerful antioxidant, as well as having anti-viral and anti-bacterial properties, so for those with allergies such as hayfever or a running nose it will help expel mucous and kill harmful bacteria floating around the immune system, although if you have a cold it's doubtful you'll be kissing anyone in the near future!
Serve this puree on toasted sourdough, with tuna and tabouli, or place a spoonful under grilled fish.

Ingredients
1 bulb garlic
1 400g can cannellini beans
1 tbsp olive oil
1 tsp chilli oil
½ cup parsley, finely chopped
seasoning
Method

Preheat the oven to 180 degrees Celsius.

Place the whole bulb of garlic in the oven and roast for 20 minutes, or until soft. Once cooked, peel the garlic and place in a food processor with the can of drained beans, and process for a minute or two.
Add oils and process until smooth.
Stir through chopped parsley and season to taste.
