Free Healthy Recipe - Basil and Pea Pesto

Dairy free, Low carbohydrate, Low GI, Low sugar, Wheat Free

This pesto can be used in pasta, served on wholegrain toast, as an entree over semi-roasted tomatoes, as a dip. The list is endless.

Ingredients
2 cloves garlic, crushed
½ cup green peas
¼ cup olive oil
1½ tbsp silken tofu
1½ tbsp pine nuts, roasted
1½ tbsp walnuts, chopped
1 tbsp mugi miso
1 tbsp lemon juice
Method

Dry roast the pine nuts. Wash the basil thoroughly.

To make the pesto, combine all the ingredients in a food processor until smooth, leaving enough texture in the sauce to make it interesting. Store in a jar with a squeeze of lemon over the top to stop discolouration.
