The key to this delicately flavoured dish is the quality of stock. You must never in any circumstances use a stock cube or supermarket stock with added flavouring and excess salt. Invest in a good quality stock (butchers or good delis often sell stock) or make your own using a recipe from our database.
Bring the stock to the boil with the lemongrass, lime, peppercorns and star anise.
Add the chicken breasts and gently bring the water back to boil. Reduce the heat to simmer for 15 minutes. Add the Asian greens to the water and cook for a further 3 minutes. Serve with some of the broth.
Note: Like carrots, chicken is another food where I would insist on buying organic. It certainly costs more, so eat less of it with the guarantee that it's free of chemical growth hormones and has led a happy life.
