Nothing too hard about this dish - but in my opinion the simpler the better . I'm trying to " sex up sardines". Gram for gram they are higher in calcium than milk (if you eat the little bones), have a high Omega 3 fat content and, trust me on this one, taste delicious.
Preheat a grill or BBQ.
Lightly score the skin of the sardine. Drizzle with olive oil, lemon and pepper.
Grill for 2 minutes each side turning once only. Serve with lemon wedges.
