Jicama
Also called yam bean or sweet turnip, this tuber has a four-lobed base and light coloured skin. The flesh is slightly sweet and crunchy. It looks like someting between a potato and a turnip.

Buy from specialty greengrocers. Look for heavy, dense roots and smooth skin.
To Store:
Store in a cool dry place so mould doesn't develop.
Tips & Tricks:
Wash and peel just before using, as the flesh darkens when exposed to air.
Cooking Tips:
It can be peeled and eaten raw, sliced or grated and added to salads, cut into cubes and sprinkled with lime juice and chilli powder or peeled and steamed or made into chips.
