Free Healthy Recipe - Marinated Tofu Kebabs

Dairy free, Low carbohydrate, Low fat, Low sugar

Many who have tried tofu before and not enjoyed it may be pleasantly surprised with these kebabs. The trick is to leave them in the marinade for as long as possible for all the flavours to be absorbed.

Ingredients
1 tsp sesame oil
½ cup olive oil
¼ cup tamari
2 limes juiced
2 cloves garlic
2 cm piece ginger, grated
1 fresh coriander root crushed
¼ cup coriander leaves, chopped
¼ cup mint leaves, chopped
375 grams hard tofu
36 button mushrooms
1 red capsicum
1 green capsicum
2 spanish onions
3 zucchini
Method

Marinade :
Mix the oils, tamari, lime juice, ginger, garlic and herbs together.
Cut the tofu into 2cm cubes. Add to a pan of boiling water and boil until the tofu floats from the bottom of the pan.
Blot dry with absorbent paper and add to the marinade.

String the kebabs with the ingredients and grill on a BBQ or hotplate for 10 - 15 minutes turning regularly.
